We're Opening a Restaurant!

Since we launched Theory almost 8 years ago in 2016, we've started a variety of businesses, mostly in the real estate industry. When we opened our event venue Edison Square in 2021, we had no plans of opening a restaurant, but the need for food & drinks became more and more apparent with every passing event. But we had a problem... none of us knew anything about opening or running a restaurant.

Enter Lewis. We found an AMAZING partner named Lewis Mageo, who has a passion for food (and especially burgers) unlike anyone I've ever met. The way he talks about food makes me hungry. Over the last 4 months, our team has been working diligently to open our very first restaurant on South Tacoma Way. And I am SO dang proud of what we've come up with. We've collectively spent thousands of hours refining our menu, navigating the health department and liquor board, building out our team, designing our space, and taste-testing a lot of burgers (tough work). And let me just say - these burgers are incredible. I crave them regularly.

I'm very excited to officially introduce Radnor's, home of the South Sound Smash Burger. We'll be open Wednesday-Sunday for Burgers & Beignets, including late night eats on Friday & Saturday nights. We'll also have Chicken Sandwiches, Rad Fries (i.e. Animal-Style fries), Tacoma Dogs, adult beverages, and vegan/gluten-free options. Please Join us for our grand opening of Radnor's this Friday 5/17 at 5 PM. Details below!

Japan

Visiting Japan has been on my bucket list for years. Japanese food is easily one of my favorite cuisines, so the food alone sparked the desire to visit, but I’ve also heard amazing things about the people, the sights, and the culture. When I found reasonably-priced direct flights from Seattle, I pulled the trigger and started planning a 10-night trip with Brian at the end of April.

It was an absolutely incredible trip. It far-exceeded my expectations, and I will 100% be back. We went to Tokyo, Osaka, Kyoto, and Kobe. If you find yourself planning a trip to Japan, I put together this blost post with some of our favorite destinations and restaurants from each city. HIGHLY recommend adding Japan to your bucket list if it's not already on there!
