Quilatoa, Ecuador
One of the most breath-taking views I’ve ever seen. This beautiful lake is in the crater of a former volcano. We hiked down the steep slope, kayaked in the bright blue water, and rode horses back up. We also stayed the night in the tiny village and almost froze to death. We went to a tiny restaurant in town owned by an Indigenous Ecuadorian family, and we enjoyed a few glasses of wine. The whole town was asleep by 9 PM.
